S´mores Vegan, Gluten Free Pancakes

Heyy you all! You´ve already realized how warm its outside? It´s just perfect for some camping, or in my case back yard camping! I live in a country were camping areas are almost non existent, and the ones that are available are or two far away (like the other side of the country) or extremely dangerous, like REALLY dangerous. So to preserve my integrity I´m more a “yeah just put a the in the yard” kind of person. I put a tent, stargaze, drink some hot cocoa with marshmallows, eat some pre-packed sandwiches and just cuddle in warm sleeping bags.Then the next morning I indulge in some s´mores pancakes. Actually and to be completely honest I like to indulge in s´more pancakes almost everyday.

They are perfectly sweet for the morning, full of chocolate chips, with the perfect amount of graham crackers and topped with goey marshmallows, you don´t need to spread anything in this fluffy babes.

And now prepare your eyes to read the best preserved secret when making the fluffiest pancakes on earth, finally revealed! Add 1 teaspoon of baking powder for every cup of flour, and let the batter rest for at least 10 minutes. Letting the batter rest with the baking powder will form small air bubbles inside the mixture, therefore the pancake will be more similar to a slice of cake than to a regular blah pancake

Ingredients

  • 1 Cup gluten free flour mix
  • 1/4 Cup crushed gluten free graham crackers (you can make them at home)
  • 1 Tablespoon stevia
  • 1 Teaspoon baking powder
  • 1/4 Cup vegan chocolate chips
  • 1 Cup almond milk
  • 1 Tablespoon melted vegan butter
  • 1/4 Cup vegan marshmallows

Instructions

  1. In a bowl mix the gluten free flour mix with the crushed gf graham crackers, the stevia, the baking powder and the chocolate chips.
  2. Add he milk and the vegan butter and mix well.
  3. Let the batter rest for 10 minutes.
  4. In a heated pan pour part of the mixture.
  5. Cook for both sides.
  6. Repeat the process with the rest of the batter.
  7. Top with marshmallows and roast
