Raw mixed nuts chocolate fudge with ganache and cacao nibs

I´m usually craving for chocolate. I love how you feel after the first bite, and the one that comes after it. But, at least in my country, vegan chocolate options are very very limited. Raw chocolate options are non existent, and healthy chocolate options are limited to one or two that are supposed to be low cal.
While making this fudge the cacao aroma is so intense that you are going to feel like if you are standing in a little European bakery, full of sweets and treats, and when you take the very first bite of your homemade snack the world is going to stop for a second, the flavors will travel, some chocolate ganache first and then the creamy nutty taste of perfection.
Decadence and nutrition are side by side. What else can we ask for?

Raw chocolate fudge with ganache and cacao nibs

Ingredients

    For the fudge
  • 50g Raw hazelnuts
  • 50g Raw almonds
  • 100g Sun dried plums, pitted
  • 3/4 Cup shredded coconut
  • 50g Raw cacao powder
  • Pinch of salt (to make the chocolate shine)
  • 75 ml Maple syrup
  • For the ganache
  • 25gr Sesame seed oil
  • 1/4 Cup raw cacao powder
  • Pinch of salt
  • 75 ml Maple syrup
  • Cacao nibs

Instructions

    For the Fudge
  1. In a food processor grind the nuts. They must look like flour.
  2. Add the shredded coconut until combined.
  3. Add the dried plums. A soft paste will form.
  4. Add the cacao and mix again.
  5. Add the maple syrup and the sea salt and process until a creamy texture is archived. The whole process while take around 10 minutes)
  6. Press firmly into a mold.
  7. Set aside while making the ganache
  8. For the ganache
  9. In the food processor mix the maple syrup and the sesame seed oil.
  10. Add the cacao and the salt and mix until combined.
  11. Pour over the fudge.
  12. Decorate with cacao nibs.
  13. Place in the fridge for thirty minutes. Cut in squares and serve.
